Certified Organic

Caparsa is a family run winery by Paolo Cianferoni and family since 1982. The property  was purchased by Paolo’s father, Prof. Reginaldo Cianferoni in 1965 and it was he who started replanting the vineyards. All 12 hectares are located within the municipality of Radda in Chianti close to the ancient Etruscan settlement at Poggio alla Croce where vines have been planted for more than 2,000 years. Within the estate biodiversity reigns supreme and lends territorial authenticity and originality to the wines. The flora, fauna, insects, mushrooms, microorganisms, soil, climatic conditions, exposure of the fields, combined with Paolo’s work and mood, make the products both incredibly traditional and unique. 

 

The entirety of the operation is certified organic (CCPB), but Caparsa’s philosophy can be summarized in one word: tradition. The winemaking techniques have been handed down from the origins of sharecropping when wine was considered on a par with food and as a true  accompaniment to food itself. Like most of the original Chianti Classico farmhouses, the cellar was built first and, only later, the kitchen, bedrooms and living areas. While the winery can be traced back to the 17th century the cellar itself dates as far back as 500 years.
